Valentine's Day Baking

The perfect Valentines Day cupcake... Red Velvet with Cream cheese Frosting. I used the Magnolia Bakery recipe, with a simple Cream Cheese frosting. They were delicious, and I loved the way they baked up. And the recipe ended up making about 3 dozen.
I also made Barefoot Contessa's famous Coconut Cupcakes. These turn out perfect every time. Earlier in the week I was able to stop at Corti Brothers, an italian gourmet grocery store in Sacramento. I love browsing the aisles, I can always find something different that I want to try. This time I found V. Alisios sweetened large shred coconut. What a difference it makes...definitely worth the splurge.



I have also been trying to perfect these mini lemon meringue tarts. I have been trying to come up with a good crust. So far I've used Fillo, and this shortbread based crust which really didn't turn out well. It was delicious, but broke apart easily... I will come up with something. The curd and meringue came from Baked. So simple, and melts in your mouth.

SO WHAT WERE THE CHOCOLATE ONES I SEE ON THE CUPCAKE STAND?.....THEY ALL LOOK WONDERFUL....I NEVER HAVE ANY LUCK THOUGH WITH INA'S RECIPES...EVERYTHING ALWAYS BURNS....SHE USES AWFULLY HIGH HEAT TO BAKE WITH...AND I MUST GET MYSELF MARTHA'S CUPCAKE BOOK...I HAVE HER COOKIE BOOK AND IT'S GREAT....

  4. Hi Sue, I love Martha's cupcake book. Totally forgot about the chocolate haha! It's from Pioneer Woman. Her chocolate sheet cake, so yummy!The recipe is on her site. I then frosted with a chocolate buttercream frosting :)

  5. Alice! SOO CUTE! I am dying to try the red velvet ones (I know the others are fab as well; i just have never had RV before). The cupcake stand is great too, which is it- and who got to eat all that yumminess?? :)

  7. Hi Sarah...How did the sugar cookies turn out? I'm sure you did a fantastic job!
    The cupcake stand was from Costco, it holds 24 cupcakes! The RV cupcakes were a big hit...I didn't try one though...I was being good, last girl's night did me in, I think I gained 5 lbs haha!
